Job Description:
We are seeking an experienced, visionary_ Culinary Executive Chef_ to lead and elevate our culinary operations across multiple locations—including a mobile food truck concept—with an unwavering commitment to Fanatical Hospitality and strategic growth.
In this executive leadership role, you will be responsible for the entire culinary lifecycle, from concept development through execution. You will ensure excellence in food quality, consistency, and innovation while crafting elevated dining experiences that align with our brand and enhance every guest interaction.
This role requires a dynamic, hands-on leader with a proven track record in managing fast-paced, high-volume culinary environments. Experience in tasting rooms, large-scale winery events, wine dinners, and refined private dining is essential.
Key Responsibilities
- Develop and execute a long-term culinary vision that aligns with our brand identity, highlights seasonal ingredients, and anticipates evolving guest preferences.
- Design compelling, on-brand menus tailored to winery experiences including tastings, private events, seasonal promotions, and large-scale gatherings.
- Lead the development of a culinary program that enhances wine pairings, elevates brand storytelling, and delivers immersive guest experiences.
- Oversee culinary operations across multiple locations—including tasting rooms, event venues, off-site activations, and a mobile food truck—ensuring consistency, efficiency, and quality at every touchpoint.
- Direct daily kitchen operations to maintain high standards in food preparation, service, cleanliness, and regulatory compliance.
- Plan and deliver winery dinners, VIP engagements, and large-scale culinary events with creativity, precision, and a commitment to fanatical hospitality.
- Recruit, train, and mentor culinary staff including Chefs de Cuisine and Kitchen Managers. Foster a high-performance culture focused on excellence, professionalism, and accountability.
- Ensure alignment in food presentation, flavor profiles, and service standards across all outlets to reflect the winery’s elevated brand image.
- Oversee sourcing and purchasing of food and kitchen supplies. Cultivate strong relationships with farmers, suppliers, and specialty vendors while maintaining quality and negotiating competitive pricing.
- Manage food and labor costs through effective budgeting, inventory control, and vendor negotiations, while upholding exceptional culinary standards.
- Maintain safe, clean, and organized kitchen environments in compliance with all health and food safety regulations.
- Work a flexible schedule, including evenings, weekends, and holidays, based on operational needs and event calendars.
- Partner with executive leadership to support expansion efforts and new culinary concepts. Work closely with marketing to promote seasonal offerings and special events.
- Define and communicate the culinary identity across all internal and external touchpoints. Serve as a spokesperson for culinary initiatives and community engagement.
- Lead experimental kitchen efforts to test and scale new culinary offerings aligned with future brand growth.
- Establish and track KPIs to measure culinary success, guest satisfaction, and operational performance across all sites.
- Perform other responsibilities as assigned to support the success of the culinary program and broader organizational goals.
