This is a hands-on production leadership role. The Cellar Master works directly under Tony Offill to execute LTV wines, maintain strong cellar discipline, and help build a high-quality custom crush operation that can scale while preserving quality, traceability, and service.

Limestone Terrace Vineyard is an award-winning, premier Texas winery producing 100% Texas-grown wines with precision, discipline, and a strong commitment to quality. Since our first vintage in 2019, LTV has emerged as one of the most respected and promising winery brands in the state.
We are building a state-of-the-art production facility designed to support both the LTV program and a growing custom crush business for select Texas wine brands. This is an opportunity to join a serious, quality-driven operation and help build a production platform capable of serving both our own wines and client partners at a high level.
Position Summary
The Cellar Master is responsible for day-to-day cellar execution for Limestone Terrace Vineyard wines while helping support and expand LTV's custom crush business. Reporting directly to Tony Offill, this role leads daily production follow-through across wine movements, barrel work, cellar sanitation, harvest operations, bottling preparation, inventory support, equipment readiness, and workflow coordination.
The ideal candidate is organized, technically strong, and comfortable operating in a fast-paced, quality-focused environment. This person must be able to manage multiple priorities, maintain accurate records, communicate clearly, and consistently uphold high standards for sanitation, organization, and execution.
Core Responsibilities
Cellar & Winemaking Execution
· Execute daily cellar operations including wine movements, racking, blending, fining, filtration, and additions.
· Perform barrel work including topping, racking, cleaning, maintenance, and barrel organization.
· Prepare and execute juice, must, and wine additions accurately and on schedule.
· Operate winery equipment including pumps, presses, filtration systems, forklifts, and other cellar machinery.
· Maintain a clean, organized, and safe cellar at all times, with a consistently high standard for sanitation.
· Identify and escalate potential wine faults, process deviations, or quality concerns immediately.
Production Planning, Records & Inventory
· Build and execute daily and weekly cellar work plans in coordination with Tony.
· Complete and maintain work orders, lot movements, and cellar activity in InnoVint with accuracy and consistency.
· Maintain traceability, inventory control, and record integrity across tanks, barrels, dry goods, and finished wine.
· Support bottling readiness, material staging, and finished goods coordination.
Harvest & Bottling
· Lead or support fruit intake, crush operations, press cycles, tank prep, fermentation logistics, and harvest sanitation.
· Work extended hours, nights, and weekends during harvest and other critical production windows when required.
· Prepare wines, cellar equipment, and staging areas for bottling runs; assist with setup, operation, breakdown, and cleanup.
Custom Crush Execution
· Help execute production for both LTV wines and custom crush client wines with professionalism, responsiveness, and precision.
· Maintain strict lot segregation, cleanliness, chain-of-custody discipline, and accountability across multiple brands and clients.
· Support client visits, tastings, and production walkthroughs as needed; represent the winery in a professional and service-oriented manner.
· Help implement systems and workflows that allow the custom crush business to grow without compromising service or quality.
Facility, Equipment & Team Coordination
· Maintain production areas, warehouse spaces, and cellar work zones in a high state of readiness.
· Monitor facility conditions and report cooling, humidity, or equipment issues immediately.
· Perform minor equipment maintenance including seals, gaskets, hose repair, and routine upkeep.
· Help direct seasonal cellar staff, interns, or temporary labor as needed and reinforce winery standards and expectations.
Qualifications
· 3–5 years of winery production or cellar experience preferred.
· Strong working knowledge of cellar operations, sanitation, filtration, wine additions, harvest workflows, and bottling prep.
· Experience with InnoVint or similar winery production software preferred.
· Ability to prioritize work, solve problems, and operate independently with limited supervision.
· Strong communication, organizational discipline, and attention to detail in a multi-lot production environment.
· Forklift experience and valid driver’s license required.
· Experience supporting custom crush operations or directing seasonal cellar labor is a plus.
Physical Requirements
· Ability to lift up to 50 pounds and move empty 60-gallon barrels.
· Comfortable working on ladders, catwalks, and elevated platforms.
· Able to work in wet, hot, cold, and harvest-intense winery conditions.
